After his Ph.D. at the Department of Fermentation Chemistry and Bioengineering, Institute of Chemical Technology Prague, Pavel Dostálek received an appointment to the Institute of Chemical Technology Prague. Since then he participated in different research projects oriented especially on brewing technology (analysis of brewing raw materials, included development of new analytical methods, namely for hop and beer, colloidal and sensorial stability of beer, employment of surplus brewing materials, spent grain and yeast, development of new products - beers, sorbents) and biosorption technology (development and application of biosorbents of heavy metals, removal of heavy metals from waste waters).

 

His current main research interests comprise brewing technology with focus to colloidal stability, preparation recombinant yeast industrial strains for production beer with higher colloidal stability and shorter production time. In addition, he is interested in development of food supplements with health effect (estrogenic, anticarcinogenic) based on special hop extracts. Besides that Pavel Dostálek was involved in teaching master students and as a supervisor of bachelor, master and Ph.D. theses.
